Bourbon Brown Sugar Blondies

I was looking to make a portable dessert to take to the drive in movies. Yes – drive in movies! My friend and I ventured to a mall where they were showing the 2020 version of Blithe Spirit with Judi Dench. I’d seen the play a long time ago, and it was a fun movie!

If you are looking for a delicious caramel buttery alternative to brownies, these are a great option. They are super easy and quick to make, and perfect to bring somewhere!

Some of you know that I discovered Brown Sugar Bourbon at a Sommelier conference, and I thought that the Bourbon would be a great addition to the recipe.

Bourbon Brown Sugar Blondies

Ingredients

  • 1 stick of butter – 8 tablespoons
  • 1 cup brown sugar
  • 1 egg
  • 1 cup and 2 tablespoons flour
  • 1 teaspoon vanilla (optional)
  • pinch of salt
  • 1/2 cup toasted chopped walnuts
  • 1/2 cup bourbon (reduced to 1/4 cup)

Steps

Preheat your oven to 350 degrees. Grease an 8X8 inch pan or use parchment paper to line the pan.

Melt the butter, and add the brown sugar. I did this in a large measuring bowl.

Add the egg.

Add the flour, and beat this for a couple of minutes until the batter begins to pull away from the sides of the bowl.

Pour 1/2 cup of the bourbon into a saucepan. Keep the flame very low (so you don’t set it on fire), and reduce it to 1/4 cup.

Add the bourbon, stir in the walnuts, and put the batter into the pan.

Bake for 20-25 minutes and check for doneness at 20 minutes. It should look crisp on top, yet the blondies will be fairly soft. The edges will begin to brown.

Once the blondies are cool, they will firm up and you can cut them into squares.

Hi Jennifer! I was looking forward to making these but NC ABC stores don’t stock BSB. ?. Wonder how they would be with honey bourbon?

So it turned out one of the other ABC stores had it. Made them tonight. They are awesome! Didn’t do the reduction and used vanilla paste. Thanks for sharing.

Sounds like a rich, wickedly delicious dessert! Very creative incorporation. Does one have to be over 21 to enjoy? I will have to try it out.
